Thai Vegetable Soup
2 TBSP olive oil
1 medium onion - finely chopped
2 cups sliced mushrooms of choice
4 cups vegetable or chicken broth
1 cup coconut milk
1 head broccoli - trimmed and chopped
*1 red bell pepper - seeded and chopped (optional)
1 TBSP minced fresh ginger root
2 TBSP fresh lime juice
salt to taste
1/2 cup cilantro - finely chopped
Heat oil in a large pan over medium heat.
Saute onion, stirring frequently, until soft - about 10 minutes.
Add mushrooms *and bell pepper and saute 4-5 minutes.
Stir in broth and coconut milk and bring to a simmer.
Reduce heat to medium. Add broccoli and ginger and cook 3-5 minutes, until the broccoli is bright green.
Stir in lime juice, cilantro and salt.
