Greena Colada

1 large cucumber - peeled and chopped
1/4-1/2 cup water
1/2 cup flat leaf parsley
1/2 cup frozen pineapple chunks
1 TBSP coconut oil
sweetener of choice (I use a tsp maple syrup)
1/2 cup ice cubes

Add all ingredients to a blender and process on high until liquid.
You can also add a half cup shredded coconut!
